Recently we heard from one of our customers: “ Wow, your pasta is a very good pasta!!! Include very high protein.“ According to our customer who is an experienced distributor in the CPG industry, she mentioned any pasta with at least 13 grams of protein in every 100 grams of pasta has been recognized as VERY GOOD PASTA.

In General, Pasta can be made from a mixture of water and flour or semolina. The good pasta used durum wheat semolina to replace flour. Semolina is a type of flour made from durum, a hard spring wheat with a high protein content and golden color. The more semolina a pasta contains, the more protein it provides. For the traditional pasta, it only has about 3-7 grams of protein in every 100 grams of pasta, that’s why many people ban pasta from their diet because it contains carbohydrates, which have become a diet no-no. However, Pasta made with durum wheat semolina, as well as healthy carbohydrates, can actually be quite good for you. In addition to being a low-fat source of protein, pasta is often fortified with key vitamins and minerals.

Now let’s talk about the durum wheat semolina. A lot of people ask us durum wheat and semolina, are they the same, what is semolina flour? And why is it healthier? 

The answer is YES, they are the same, the reason we called it “ Durum Wheat Semolina” is because semolina actually came from durum wheat, the milled process that separated the bran and germ from the starch, then here we born the “ Semolina”, that’s why semolina is a byproduct of durum wheat. Because of a high protein and gluten content and is highly resistant to milling, durum wheat is harder than any other wheat variety, that’s said, the semolina contains even higher levels of gluten protein because it’s essentially a concentrated form of durum wheat. 

However, you probably have the situation in the supermarket and are confused about” should i take semolina flour OR Durum four?” As per the description before they are the same family, but they both contain high protein, durum flour is quite fine and resembles more traditional baking flour, whereas semolina flour is much coarser. The coarser-grained semolina flour is perfect for hard pastas, as it allows the pasta to keep its shape after cooking and gives the cooked pasta the “al dente” property that most people prefer.On the other hand,Durum Flour is used for softer noodles. It makes a softer dough that can be easily formed into pasta shapes that will bend or curl when cooked per edible phoenix. For our personal taste, the semolina flour is definitely ideal for making pasta, baking and recipes because of the texture and gluten contain, which create a less sticky dough and is much more elastic, this really helps pasta hold its shape when cooking, and the taste of al dente is just what i like about the pasta.

Pasta can be an excellent addition to a healthful diet. A study from BMJ Journals, finding that people on a low-GI diet still lost weight when they ate pasta. The study concluded that pasta did not cause any weight gain or increases in body fat.
