Orecchiette is a type of pasta that is very famous in the Puglia region in Southern Italy. The name comes from their shape, which resembles a small ear. Ingredients:

Durum wheat semolina and water with spinach and tomatoes. It is made using the traditional Italian pasta-making technique of using bronze dies and natural drying.
